Rebujito

The Rebujito is a Fino spritzer from Jerez, Andalusia, and has "a similar buzz to fin and tonic or a vodka soda, but with half the alcohol. Even though the taste is quite strong, the Fino Sherry means it is also very dry, so you drink it slowly. It's also relatively low in sugar compared with most other cocktails".
The Rebujito is made with three parts Fino to one part soda water but for an extra kick, Blazquez-Garcia makes his with fresh lemon-juice. "Lemons are at their ripest in summer, so the quality of the vitamins is highest - so the Rebujito is healthy and hip! It is also a sleek drink, and not too ostentatious, so is ideal for men and women alike".
Fino Sherry 75ml
Lemon juice 10ml
Lime juice 10ml
Sugar syrup 10ml
If you don't have sugar syrup or a teaspoon of water dissolved into 10 ml warm water will be fine
Build in a tall glass over ice with lime and lemon wedges, and top up with soda water.
Negroni

The Spanish Negroni is a twist on the Italian great, adding one part Oloroso - a dark, walnut-laced style of Sherry - to the classic gin and Campari base. Blazquez-Garcia explains that 'the Oloroso adds a smooth, velvety twist to this classic aperitif, and is perfect for kick-starting your evening. The Oloroso - meaning fragrant in Spanish - mingles with the sharp bitters and botanicals of the gin and Aperol, and adds a super-smooth finish'.

Aperol or Campari 25ml
If you don't have a cocktail shaker, pour into a tall glass and shake over ice, covering the top of the glass with your hand. This chills the Sherry and other ingredients quickly - and is known in the bartender-business as a Spanish throw!

Black Sangria

Tobias has saved the best summer quaffer for last - his Black Sangria made with Cream Sherry - and which he has been quietly making for years, but which is now pride of place on his summer drinks menu. Reach for a bottle of quality Cream Sherry with its silky, dark coffee and Seville orange notes, and stir it up with fresh lemon and cranberry juice over cracked ice-cubes. "Load it with summer fruits, include fresh grapes, orange, pear and apple and you can drink up the health benefits, too!"
Cream Sherry 75ml
Spanish Brandy 10ml
Lemon juice 5ml
Cranberry juice 25ml
Build over ice in a tall glass and diced orange, pear, apple and grapes. Top up with ginger ale and soda water.
